Topics taught: DNA basics, replication, repair, recombination; RNA transcription, processing,control during development; cellular aqueous environment, pH, pH buffers; collagen, proteoglycans, glycoproteins, bone biology, blood coagulation, extracellular matrix; lipid and sugar digestion, metabolism, fat digestion, lipid metabolism, integration of metabolism; porphyrins and bile pigments, gene regulation in development, vitamins, minerals, and their importance to nutrition; Nutrition of elderly, pregnancy, newborns, teenagers, nutrition in management of chronic disease, nutrition in diabetics, nutrition and cancer, nutrition and alcoholism.
